I am trying very hard these days to stay away from things that come in a can or box so I spend a lot of time digging and trying things to replace some of the more common canned goods, such as this recipe we use to replace Cream of Chicken Soup.
Condensed Soup Mix
Mix everything really well in a bowl and store in an airtight container. I keep mine in a mason jar that seal tight with the FoodSaver attachment.
To make the equivalent of a can of soup, combine 1/3 cup of mix with 1 1/4 cups of water in saucepan and simmer (stirring pretty constantly) until thickened. Hubby uses it dry as a thickening agent and flavor adder when he needs quick sauce for pasta. Because it has so much less sodium than the store bought kind, we do’t fee so guilty about using it.
